Meatless Meatloaf with Gravy
This is a heart-healthy, meat-free alternative to an American classic that won‘t leave you missing beef.
2 Cups Soy Ground “Beef”
Preheat oven to 350° F. Put 2 cups of ground soy meat in a large mixing bowl. Add bread crumbs and stir. Next, add the egg, chopped peppers, onion, garlic, thyme and sage. Add salt and pepper to taste. Mix thoroughly. Smear olive oil around the edges of meatloaf pan. Be generous with the oil. Fold meatloaf mixture into the pan. Cook for thirty minutes, or until a toothpick inserted into the loaf comes out clean.
It is best to make this delicious gravy minutes before your meal while it is still hot. It goes with the meatloaf, but it works poured over biscuits, mashed potatoes and even with Thanksgiving foods.

Heat the olive oil in a frying pan. When the oil is warm, pour the package of mushroom onion soup mix into the pan and stir, getting the dry mix thoroughly coated in oil. Sprinkle the flour all around the pan. Stir thoroughly, then let the flour cook a little. This will take care of that floury flavor that some gravies have. Next whisk in some of the milk. Add it little by little until it is all in. If the mixture is still too thick just add water. Salt and pepper come next. Taste the gravy to make sure it is to your liking.
